- Preheat oven to 400°F (200°C). Season chicken breasts with garlic powder, Italian seasoning, salt, and pepper. Bake until cooked through, about 25 minutes, then shred.
- In a large bowl, combine shredded chicken, mushrooms, peas, cabbage, potatoes, and pureed tomatoes. Mix well.
- Pour broth and water into a baking dish, add the mixture, and stir to combine. Cover with foil.
- Bake uncovered for 30-35 minutes until vegetables are tender and casserole is heated through.
- Serve hot, garnished with additional herbs if desired.
