Ingredients
  

Protein
  • 2 pcs boneless skinless chicken breasts
  • 2 cups chopped mushrooms
  • 1 cup frozen peas
  • 1 cup chopped cabbage
  • 1 cup diced potatoes
  • 1 cup pureed tomatoes
  • 2 Tbsp garlic powder
  • 1 Tbsp Italian seasoning
  • Salt and pepper to taste
Broth and Water
  • 5 cups chicken broth
  • 2-3 cups water

Method
 

  1. Preheat oven to 400°F (200°C). Season chicken breasts with garlic powder, Italian seasoning, salt, and pepper. Bake until cooked through, about 25 minutes, then shred.
  2. In a large bowl, combine shredded chicken, mushrooms, peas, cabbage, potatoes, and pureed tomatoes. Mix well.
  3. Pour broth and water into a baking dish, add the mixture, and stir to combine. Cover with foil.
  4. Bake uncovered for 30-35 minutes until vegetables are tender and casserole is heated through.
  5. Serve hot, garnished with additional herbs if desired.

Notes

Use fresh or frozen vegetables for best flavor. Adjust seasoning to taste.
