  • 1/2 cup grated parmesan cheese
Sun-Dried Tomatoes
  • 1/4 cup sun-dried tomatoes, chopped (preferably packed in oil, drained)

  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon red pepper flakes (optional, for a little heat)
Vegetables
  • 3 cups fresh spinach leaves

Method
 

  1. Season chicken with salt, pepper, smoked paprika, and Italian seasoning.
  2. Sear chicken in a skillet with olive oil or butter until golden, about 2-3 minutes per side.
  3. Transfer seared chicken to crockpot. Whisk together cream, broth, garlic, Parmesan, and sun-dried tomatoes; pour over chicken.
  4. Cook on low for 4-6 hours or high for 2-3 hours. About 15 minutes before serving, stir in spinach until wilted.
  5. Adjust seasoning, garnish with herbs, and serve hot over cauliflower rice or low-carb veggies.
