Ingredients
  

Meat
  • 1 pound ground beef (or ground turkey)
  • 1/2 cup almond flour
  • 1/4 cup grated parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried italian herbs (oregano, basil, thyme)
  • to taste salt and pepper
  • 1/4 cup fresh parsley, chopped (for garnish)
  • 1/4 cup unsalted butter
  • 2 tablespoons olive oil

Method
 

  1. Preheat oven to 400°F (200°C). Mix beef, almond flour, parmesan, egg, garlic, herbs, salt, and pepper. Form into 1-inch meatballs and place on a baking sheet.
  2. Heat olive oil in a skillet over medium heat. Brown meatballs on all sides for 4-5 minutes.
  3. Transfer meatballs to the oven and bake for 10-15 minutes until cooked through.
  4. In the same skillet, melt butter over low heat. Add garlic and sauté for 1-2 minutes.
  5. Drizzle garlic butter over meatballs and garnish with parsley before serving. Enjoy!

For best flavor, use fresh parsley and high-quality parmesan cheese.
