  • 2 pounds ground beef
  • 1/2 large onion diced
  • 2 cloves garlic minced
  • 1/2 large bell pepper diced
  • 1 packet taco seasoning or 4 tablespoons of homemade taco seasoning
  • 4 eggs
  • 2 cups Mexican cheese shredded

Method
 

  1. Preheat oven to 350 degrees. Brown ground beef with peppers, onions, and garlic.
  2. Drain excess oil and stir in taco seasoning.
  3. Transfer beef mixture to a casserole dish and spread evenly.
  4. Combine eggs and half the cheese, pour over beef, and mix.
  5. Top with remaining cheese and bake uncovered for 25 minutes.
  6. Remove from oven and top with keto taco toppings. Serve immediately.
