Leftover Rice Recipes (Indian)

Ingredients
  

Main
  • 2 cups leftover cooked rice
  • 1 small onion, finely chopped
  • 1-2 green chilies green chilies, chopped
  • 0.5 cup mixed vegetables (peas, carrots, beans)
  • 0.5 teaspoon cumin seeds
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • to taste Salt
  • 2 tablespoons oil or ghee
  • Fresh coriander leaves for garnish

Method
 

  1. Heat oil or ghee in a pan over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Sauté onions and green chilies until translucent.
  4. Add vegetables, turmeric, garam masala, and salt; cook 3-4 mins.
  5. Mix in leftover rice, heat through, stir occasionally.
  6. Garnish with coriander leaves and serve hot.

Notes

Use fresh coriander for best flavor.
