  • 1 lb Chicken Breasts boneless and skinless
  • 8 oz Pasta any shape you prefer
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic minced
  • 1 lemon Lemon zested and juiced
  • 0.5 cup Chicken Broth
  • 0.25 cup Parmesan Cheese freshly grated
  • Salt and Pepper to taste
  • Fresh Parsley optional, for garnish

Method
 

  1. Cook pasta according to package instructions, reserving 1/2 cup of pasta water.
  2. Heat olive oil in a skillet, season chicken with salt and pepper, and cook until golden brown and cooked through. Remove and set aside.
  3. Lower heat, add garlic and sauté until fragrant. Add chicken broth, lemon juice, and lemon zest, stirring to combine.
  4. Slice chicken into strips and add back to the skillet with cooked pasta. Toss, adding pasta water to coat evenly.
  5. Sprinkle Parmesan over pasta and stir until melted. Adjust seasoning if needed.
  6. Top with parsley and serve immediately.

Notes

Don't overcook the pasta; it should be slightly underdone as it will finish cooking in the sauce.
