  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup dried cranberries
  • 1/2 cup powdered sugar (for dusting, optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet.
  2. Cream butter and sugar, then mix in egg, vanilla, lemon juice, and zest.
  3. Whisk flour, baking powder, and salt; combine with wet ingredients.
  4. Fold in cranberries, drop dough onto sheet, and bake for 10-12 minutes.
  5. Cool cookies and dust with powdered sugar if desired.

Notes

For extra flavor, add a pinch of lemon extract.
