Ingredients
  

Dry ingredients
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
Wet ingredients
  • 1/2 cup butter (softened)
  • 1 cup sugar
  • 1 large egg
  • 2 tablespoons lemon juice*
  • 1 teaspoon lemon zest*
  • 1/2 teaspoon vanilla extract
  • 5-8 drops yellow food coloring ((optional))
  • 1/4 cup sugar for coating
  • 3/4 cup powdered sugar ((aka icing sugar or confectioners sugar))

Method
 

  1. Mix flour, salt, and baking soda; set aside.
  2. Cream butter and sugar, add egg, lemon juice, zest, vanilla, and food coloring; combine.
  3. Gradually add dry ingredients; chill dough for 2 hours.
  4. Preheat oven to 350°F; scoop dough, roll into balls, coat in sugars, and place on baking sheets.
  5. Bake 10-12 minutes; cool on sheet 5 minutes, then transfer to rack.

Notes

Chill the dough well for best results and avoid overbaking for soft, chewy cookies.
