Ingredients
  

For the Pasta Salad:
  • 12 ounces pasta rotini, penne, or farfalle
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
  • 1/3 cup red onion finely sliced
  • 1/2 cup kalamata olives sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh basil chopped (optional)
For the Lemon Herb Dressing:
  • 1/4 cup olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 1 clove garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried dill
  • to taste Salt and pepper

Method
 

  1. Cook pasta according to package directions.
  2. Drain and rinse pasta with cold water; set aside.
  3. Whisk together olive oil, lemon juice, lemon zest, garlic, oregano, and dill.
  4. Season with salt and pepper; adjust lemon juice/oil to taste.
  5. Combine pasta, tomatoes, cucumber, onion, olives, feta, parsley, and basil (if using).
  6. Pour dressing over salad and toss.
  7. Refrigerate for at least 30 minutes.
  8. Toss and adjust seasoning before serving.

Notes

For best flavor, let the salad sit in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
