  • 3 tablespoons fresh lemon juice
  • 2 tablespoons honey
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • to taste Salt and black pepper

Method
 

  1. Combine lemon juice, honey, Dijon mustard, garlic, salt, and pepper in a bowl.
  2. Slowly drizzle in olive oil while whisking until emulsified.
  3. Taste and adjust seasoning with honey or lemon juice.
  4. Store in an airtight jar in the refrigerator for up to 7 days. Shake before use.

Notes

For a smoother vinaigrette, use a blender or immersion blender to emulsify the ingredients.
