Method
 

  1. Whisk lemon juice, olive oil, Dijon mustard, and garlic in a bowl.
  2. Add honey or maple syrup if desired.
  3. Season with salt and pepper to taste.
  4. Whisk until well combined and emulsified.
  5. Taste and adjust seasonings.
  6. Use immediately or store in the refrigerator for up to 5 days.

Notes

For a creamier vinaigrette, add a tablespoon of mayonnaise or Greek yogurt.
