  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon honey or maple syrup optional

Method
 

  1. Whisk together lemon juice, olive oil, Dijon mustard, minced garlic, and honey (if using) in a small bowl.
  2. Season with salt and pepper to taste.
  3. Whisk until well combined and emulsified.
  4. Taste and adjust seasonings as needed.
  5. Store in an airtight container in the refrigerator for up to 5 days.

Notes

For a creamier vinaigrette, slowly drizzle in the olive oil while whisking vigorously.
