Ingredients
  

Canned Pumpkin
  • 1 can (15 oz) Libby's 100% Pure Pumpkin
  • 4 large eggs
  • 1 cup vegetable oil
  • 2/3 cup water
  • 3 1/2 cups granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 1/2 cups all-purpose flour
  • 1 cup chopped nuts (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour two loaf pans.
  2. Mix pumpkin, eggs, oil, and water until combined.
  3. Whisk together sugar, spices, baking soda, baking powder, and salt.
  4. Gradually add dry ingredients to pumpkin mixture; stir until just combined.
  5. Fold in flour and nuts if using. Divide batter into pans.
  6. Bake 60-70 minutes; cool before removing from pans.

Notes

For best results, do not overmix the batter.
