Ingredients
  

Vegetables
  • 1 large broccoli head trimmed into small pieces
  • 2 tablespoons extra virgin olive oil
  • 3 cloves minced garlic
  • 0.25 teaspoon crushed red pepper
  • Salt and black pepper to taste
  • 12 ounces penne pasta
  • 1 cup freshly grated parmesan cheese

Method
 

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. Steam or blanch the broccoli until tender, about 3-4 minutes.
  3. In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant, about 1 minute.
  4. Add cooked broccoli to the skillet, season with red pepper, salt, and black pepper, and cook for 2 minutes.
  5. Combine the cooked pasta with the broccoli mixture, sprinkle with parmesan cheese, and toss to combine.

Notes

For extra flavor, add a squeeze of lemon or a sprinkle of red pepper flakes.
