  • 1 lb Cajun chicken beef sausage, sliced
Grains
  • 1 cup long-grain rice
Broth & Dairy
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers (red, green, or yellow)
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 0.5 teaspoon paprika
  • 0.25 teaspoon black pepper
  • 0.5 cup sour cream
  • 2 tablespoons olive oil
Garnish
  • Fresh parsley, chopped for garnish

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Sauté sausage, peppers, onion, and garlic in olive oil until tender, 5-7 minutes.
  3. Add rice, broth, Cajun seasoning, paprika, and black pepper; bring to a boil.
  4. Reduce heat, cover, and simmer 15 minutes until rice is cooked.
  5. Stir in sour cream and half of cheese, transfer to a greased dish, top with remaining cheese, and bake 20-25 minutes.
  6. Garnish with chopped parsley before serving.

Notes

For extra flavor, add hot sauce or additional Cajun seasoning to taste.
