Ingredients
  

Eggs and Egg Alternatives
  • 4 large eggs or chickpea flour + water for egg-free
  • 0.5 cup shredded cheese
  • 0.5 cup finely chopped veggies (spinach, bell peppers, zucchini, broccoli)
  • 1 cup cooked chicken breast, shredded
  • 1 cup mashed sweet potato
  • 0.5 cup breadcrumbs (or crushed oats)
  • 1 egg egg (or flax egg) for egg-free
  • 0.25 tsp garlic powder
Pasta and Vegetables
  • 2 cups cooked macaroni
  • 1 small zucchini diced
  • 1 carrot diced
  • 0.5 onion chopped
  • 1 can (14 oz) crushed tomatoes
  • 0.5 cup red lentils optional for protein
Dairy & Condiments
  • 1 cup plain Greek yogurt
  • 0.25 cup granola or crushed oats
  • 1 tsp honey or maple syrup for kids over 1 year
Additional Proteins & Toppings
  • 0.5 cup cooked beans or shredded chicken
  • 2 small tortillas whole wheat if you like
  • 0.5 cup shredded cheese
Additional Veggies & Fruits
  • 0.25 cup mixed berries fresh or frozen

Method
 

  1. Preheat oven to 350°F (175°C) and grease a mini muffin pan.
  2. Whisk eggs (or chickpea mix), then stir in cheese and veggies. Pour into muffin cups and bake 15–18 minutes.
  3. Cook pasta and sauté vegetables. Prepare tomato sauce with lentils, then toss with pasta.
  4. Layer yogurt, berries, and granola in cups. Assemble tortillas with cheese and toppings, then cook until crispy.
  5. Prepare veggie patties or bake meatballs, then serve with rice or mashed potatoes.
