Method
- Preheat oven to 400°F (200°C). Roast sweet potatoes with olive oil and salt for 25-30 minutes.
- Toss chickpeas with olive oil, paprika, and salt. Roast for 20-25 minutes until crispy.
- Spread hummus on roasted sweet potatoes, top with chickpeas, red onion, parsley, and vegan feta. Serve and enjoy!
Notes
For extra flavor, add a squeeze of lemon or a drizzle of tahini.
