Ingredients
  

Pasta
  • 12 oz ziti pasta
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup mushrooms, sliced
  • 1 cup spinach, chopped
  • 24 oz marinara sauce
  • 1 teaspoon Italian seasoning
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • to taste Salt and pepper
  • for garnish Fresh basil

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cook ziti until al dente, drain, and set aside.
  3. Sauté onion in olive oil until translucent, then add garlic, bell pepper, zucchini, and mushrooms; cook until tender.
  4. Mix in spinach, marinara, Italian seasoning, salt, and pepper; cook briefly.
  5. Combine cooked pasta, vegetable mixture, and ricotta; transfer to a greased dish, top with cheeses, and bake covered for 20 minutes, then uncovered for 10-15 minutes.
  6. Let cool slightly, garnish with basil, and serve.

Notes

Feel free to add extra vegetables or cheese for more flavor.
