Ingredients
  

Vegetables
  • 4 medium zucchinis, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
Cheeses
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
Additional ingredients
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup mayonnaise
  • 1/4 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • to taste Salt and pepper
  • for garnish Fresh parsley optional

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch dish.
  2. Sauté onion and garlic in olive oil until translucent and fragrant.
  3. Add zucchini slices; cook 5-7 minutes, season with salt, pepper, Italian seasoning.
  4. Mix zucchini, tomatoes, cheeses, bacon (if using), and half Parmesan in a bowl.
  5. Transfer mixture to dish, top with breadcrumbs and remaining Parmesan.
  6. Bake 20-25 minutes until golden and bubbly. Cool slightly, garnish with parsley if desired.

Notes

For extra flavor, add a pinch of red pepper flakes or fresh herbs.
