Method
- Place all dressing ingredients into a blender and pulse until well blended.
- Pour into a salad dressing container and refrigerate until ready to serve.
- Heat a medium pan over medium heat. Slice chicken in half to create two thin slices.
- Pat chicken dry and season with salt and pepper. Cook on both sides until golden brown and internal temperature reaches 165°F.
- Place lettuce, parmesan, and crisps into a large bowl.
- Pour dressing over the salad and toss until well coated.
- Divide the salad into 4 bowls.
- Slice the chicken and place on top of the salad.
