- Combine chicken with 1 tablespoon olive oil, oregano, basil, garlic powder, salt, and pepper. Toss to coat.
- Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat.
- Add chicken to skillet and cook until browned and cooked through, about 6-8 minutes.
- Prepare Greek salad: Combine cucumber, cherry tomatoes, Kalamata olives, and red onion in a bowl.
- Divide cooked cauliflower rice among four bowls.
- Top each bowl with cooked chicken, Greek salad, feta cheese, and Tzatziki sauce.
- Serve immediately.
