  • 1 lb ground beef
  • 2 medium zucchini
  • 1 cup shredded mozzarella cheese
  • 1 cup tomato sauce
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Method
 

  1. Slice zucchini, salt, and let sit to draw out moisture. Pat dry.
  2. Heat olive oil, sauté onion and garlic until softened.
  3. Add ground beef and cook until browned.
  4. Stir in tomato sauce, Italian seasoning, salt, and pepper. Simmer for 5–7 minutes.
  5. Preheat oven to 375°F (190°C) and grease a baking dish.
  6. Layer zucchini, beef mixture, and repeat.
  7. Sprinkle cheese over the top.
  8. Bake for 25–30 minutes until cheese is bubbly and golden.
  9. Let cool for 5 minutes before slicing and serving.

Notes

For a spicier kick, add a pinch of red pepper flakes to the beef mixture.
