Ingredients
  

Main ingredients
  • 2 cups cooked rice
  • 1/2 cup leftover vegetables e.g., peas, corn, carrots
  • 1/4 cup grated cheese optional
  • 1/4 cup breadcrumbs
  • 1 egg egg or flax egg for vegan
  • 1 teaspoon soy sauce
  • to taste Salt and pepper
  • Oil for frying Oil

Method
 

  1. Mix rice, vegetables, cheese, breadcrumbs, egg, soy sauce, salt, and pepper.
  2. Form mixture into small patties.
  3. Heat oil in a pan over medium heat.
  4. Fry patties 3-4 minutes per side until golden and crispy.
  5. Drain on paper towels and serve warm.

Notes

Use a non-stick pan for easier flipping and less oil.
