  • 2 cups fresh spinach, chopped
  • 1 cup cottage cheese
  • 4 large eggs eggs
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon onion powder (optional)
  • as needed Cooking spray or olive oil for greasing

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Whisk eggs, milk, salt, pepper, garlic powder, and onion powder.
  3. Add cottage cheese and spinach; mix gently.
  4. Grease a baking dish and pour in the mixture.
  5. Top with shredded cheese and bake 25-30 mins until set and golden.
  6. Let cool briefly, then slice and serve.

You can add herbs or spices for extra flavor.
