  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour (for streusel)
  • 2 tablespoons cold butter (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. Mix pumpkin, maple syrup, oil, eggs, and vanilla until smooth.
  3. Whisk dry ingredients; combine with wet mixture, fold in nuts if using.
  4. Pour batter into pan. Mix streusel ingredients until crumbly; sprinkle over batter.
  5. Bake 60-70 minutes; cool in pan 10 minutes, then transfer to wire rack.
