Mediterranean Baked Cod

Flaky cod baked in a flavorful Mediterranean-inspired tomato and olive sauce, topped with feta and parsley. A quick and healthy weeknight dinner!

  • 4 cod fillets 6-ounce
  • 1 tablespoon olive oil
  • 1/2 cup red onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5-ounce, undrained
  • 1/2 cup Kalamata olives pitted and halved
  • 1/4 cup feta cheese crumbled
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • for serving Lemon wedges optional

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Lightly grease a baking dish.
  3. Place cod fillets in the prepared baking dish.
  4. Heat olive oil in a skillet over medium heat. Add red onion and cook until softened, about 5 minutes.
  5. Add garlic and cook for 1 minute more, until fragrant.
  6. Stir in diced tomatoes, olives, oregano, salt, and pepper. Bring to a simmer and cook for 5 minutes.
  7. Pour the tomato mixture over the cod fillets.
  8. Sprinkle feta cheese and parsley over the top.
  9. Bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.
  10. Serve immediately with lemon wedges, if desired.

Notes

For a spicier dish, add a pinch of red pepper flakes to the tomato mixture.
