Method
- Preheat oven to 400°F (200°C).
- Lightly grease a baking dish.
- Place cod fillets in the prepared baking dish.
- Heat olive oil in a skillet over medium heat. Add red onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more, until fragrant.
- Stir in diced tomatoes, olives, oregano, salt, and pepper. Bring to a simmer and cook for 5 minutes.
- Pour the tomato mixture over the cod fillets.
- Sprinkle feta cheese and parsley over the top.
- Bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.
- Serve immediately with lemon wedges, if desired.
Notes
For a spicier dish, add a pinch of red pepper flakes to the tomato mixture.
