  • 4 large eggs
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup Kalamata olives pitted and halved
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • 1/4 teaspoon red pepper flakes optional
  • Fresh oregano or basil chopped (for garnish)

  • Crusty bread for serving

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Drizzle olive oil in an oven-safe dish.
  3. Add minced garlic and red pepper flakes (if using).
  4. Scatter cherry tomatoes and Kalamata olives.
  5. Crumble feta cheese evenly.
  6. Create wells and crack an egg into each.
  7. Season with salt and pepper.
  8. Bake for 12-15 minutes, until egg whites are set.
  9. Garnish with fresh oregano or basil.
  10. Serve immediately with crusty bread.
