Method
- Preheat oven to 350°F. Grease a 9x13 inch baking dish with olive oil.
- Whisk eggs, milk, salt, pepper, and oregano in a large bowl.
- Add bell peppers, tomatoes, spinach, feta, red onion, and olives to the egg mixture. Stir well.
- Pour mixture into the baking dish, spreading evenly.
- Bake for 30-35 minutes, until eggs are set and top is golden.
- Cool for 5 minutes before slicing. Serve warm.
