Casserole Ingredients
  • 8 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 cup diced bell peppers red, green, or yellow
  • 1 cup diced tomatoes fresh or canned
  • 1 cup baby spinach chopped
  • 0.5 cup crumbled feta cheese
  • 0.5 cup diced red onion
  • 0.5 cup sliced black olives
  • 1 tablespoon olive oil

Method
 

  1. Preheat oven to 350°F. Grease a 9x13 inch baking dish with olive oil.
  2. Whisk eggs, milk, salt, pepper, and oregano in a large bowl.
  3. Add bell peppers, tomatoes, spinach, feta, red onion, and olives to the egg mixture. Stir well.
  4. Pour mixture into the baking dish, spreading evenly.
  5. Bake for 30-35 minutes, until eggs are set and top is golden.
  6. Cool for 5 minutes before slicing. Serve warm.
