Ingredients
  

Chicken
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
Bowl Ingredients
  • 1 cup cooked quinoa or rice
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives halved
  • 1/4 cup red onion thinly sliced
Dressing
  • 2 tbsp lemon juice
  • 2 tbsp olive oil (for dressing)
  • 1 tbsp chopped fresh parsley

Method
 

  1. Toss chicken with 1 tbsp olive oil, oregano, garlic powder, salt, and pepper.
  2. Heat skillet over medium-high heat. Add chicken and cook until browned, about 5-7 minutes.
  3. Prepare quinoa or rice according to package directions.
  4. Whisk together lemon juice and 2 tbsp olive oil.
  5. Assemble bowls: Start with quinoa or rice.
  6. Top with chicken, cucumber, tomatoes, feta, olives, and red onion.
  7. Drizzle with lemon-olive oil dressing.
  8. Garnish with parsley and serve.
