Ingredients
  

Chicken
  • 1 lb boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 0.5 tsp garlic powder
  • 0.25 tsp salt
  • 0.25 tsp black pepper
Bowl Ingredients
  • 1 cup cooked quinoa or brown rice
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 0.5 cup crumbled feta cheese
  • 0.25 cup Kalamata olives halved
  • 0.25 cup red onion thinly sliced
Dressing
  • 2 tbsp lemon juice
  • 2 tbsp olive oil for dressing
  • 1 tbsp chopped fresh parsley

Method
 

  1. Toss chicken with 1 tbsp olive oil, oregano, garlic powder, salt, and pepper.
  2. Heat skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Whisk together lemon juice and 2 tbsp olive oil for the dressing.
  4. Assemble bowls: Divide quinoa or rice between bowls.
  5. Top with cooked chicken, cucumber, tomatoes, feta cheese, olives, and red onion.
  6. Drizzle with lemon-olive oil dressing and garnish with fresh parsley. Serve immediately.

Feel free to add other vegetables like bell peppers or zucchini for extra nutrients and flavor.
