Ingredients
  

Chicken Marinade
  • 1.5 lbs boneless, skinless chicken thighs cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Gyros
  • 4 pita breads
  • 1 cucumber peeled, seeded, and diced
  • 1/2 red onion thinly sliced
  • 1 tomato diced
  • 1/4 cup Kalamata olives pitted and halved
Creamy Feta Tzatziki
  • 1 cup plain Greek yogurt
  • 4 oz feta cheese crumbled
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh mint
  • 1 clove garlic minced
  • 1 tablespoon lemon juice

Method
 

  1. Marinate chicken with olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper for at least 30 minutes.
  2. Prepare Creamy Feta Tzatziki: Combine Greek yogurt, feta cheese, dill, mint, garlic, and lemon juice.
  3. Cook chicken in a skillet or grill pan until browned and cooked through (6-8 minutes).
  4. Warm the pita breads.
  5. Assemble gyros: Spread tzatziki on pita, top with chicken, cucumber, red onion, tomato, and olives.
  6. Fold or roll and serve.

Notes

For best flavor, marinate the chicken overnight. Serve with a side salad for a complete meal.
