Chicken Gyro Ingredients
  • 1.5 lbs boneless, skinless chicken thighs cut into strips
  • 1 tbsp olive oil
  • 1 red bell pepper thinly sliced
  • 1/2 red onion thinly sliced
  • 4 cloves garlic minced
  • 1 tbsp dried oregano
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 6 pita breads
Creamy Feta Tzatziki Ingredients
  • 1 cucumber peeled, seeded, and grated
  • 1 cup Greek yogurt
  • 4 oz feta cheese crumbled
  • 2 tbsp lemon juice
  • 1 tbsp fresh dill chopped
Optional Toppings
  • lettuce
  • tomatoes
  • Kalamata olives

Method
 

  1. Combine chicken, olive oil, bell pepper, onion, garlic, oregano, paprika, salt, and pepper in a bowl.
  2. Cook chicken mixture in a skillet or grill pan for 8-10 minutes, stirring occasionally.
  3. Prepare tzatziki: combine cucumber, yogurt, feta, lemon juice, and dill. Mix well.
  4. Warm pita breads.
  5. Assemble gyros: spread tzatziki on pita, top with chicken and desired toppings.
  6. Fold or roll and serve immediately.

Notes

Adjust the amount of feta cheese in the tzatziki to your liking for a tangier or milder flavor.
