  • 2 cups cooked chicken shredded or diced
  • 1/2 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup crumbled feta cheese
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • to taste Salt and pepper

Method
 

  1. Combine chicken, cucumber, red onion, olives, and tomatoes in a bowl.
  2. Whisk olive oil, lemon juice, oregano, garlic powder, salt, and pepper in a small bowl.
  3. Pour dressing over the chicken mixture and toss.
  4. Gently fold in the feta cheese.
  5. Serve immediately or chill. Enjoy!

Notes

For a creamier salad, add a dollop of Greek yogurt to the dressing.
