  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 zucchini sliced
  • 0.5 red onion sliced
  • 1 cup cherry tomatoes halved
  • 0.5 cup Kalamata olives pitted and halved
  • 0.25 cup sun-dried tomatoes oil-packed, drained and chopped
  • 2 cloves garlic minced
  • 2 tablespoons lemon juice
  • 1 tablespoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned, about 5-7 minutes. Remove and set aside.
  3. Add bell peppers, zucchini, and red onion to the skillet. Cook until softened, about 5-7 minutes.
  4. Add garlic, cherry tomatoes, Kalamata olives, and sun-dried tomatoes. Cook for 2-3 minutes.
  5. Return chicken to the skillet.
  6. Stir in lemon juice, oregano, salt, and pepper. Cook for 1-2 minutes.
  7. Serve over quinoa or couscous, if desired.

Notes

For a spicier dish, add a pinch of red pepper flakes.
