Method
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned, about 5-7 minutes. Remove and set aside.
- Add bell peppers, zucchini, and red onion to the skillet. Cook until softened, about 5-7 minutes.
- Add garlic, cherry tomatoes, Kalamata olives, and sun-dried tomatoes. Cook for 2-3 minutes.
- Return chicken to the skillet.
- Stir in lemon juice, oregano, salt, and pepper. Cook for 1-2 minutes.
- Serve over quinoa or couscous, if desired.
Notes
For a spicier dish, add a pinch of red pepper flakes.
