  • 1.5 lbs boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 zucchini sliced
  • 1/2 red onion sliced
  • 1 cup cherry tomatoes halved
  • 1/2 cup Kalamata olives halved
  • 1/4 cup sun-dried tomatoes oil-packed, drained and chopped
  • 2 cloves garlic minced
  • 2 tbsp lemon juice
  • 1 tbsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes optional
  • to taste Salt and pepper
  • for serving Cooked quinoa or couscous optional
  • for serving Feta cheese crumbled, optional

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned, about 5-7 minutes. Season with salt and pepper.
  3. Add bell peppers, zucchini, and red onion. Cook until slightly softened, about 5 minutes.
  4. Stir in cherry tomatoes, Kalamata olives, sun-dried tomatoes, and garlic. Cook for 2-3 minutes.
  5. Stir in lemon juice, oregano, basil, and red pepper flakes (if using). Season with salt and pepper.
  6. Cook for 1-2 minutes more, allowing the flavors to meld.
  7. Serve over quinoa or couscous, if desired. Top with feta cheese, if desired.

Notes

Adjust the amount of red pepper flakes to control the level of spiciness.
