  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 14.5 oz can diced tomatoes, undrained
  • 1 15 oz can chickpeas, rinsed and drained
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 1 tbsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley, chopped, for garnish Optional

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken thighs with salt, pepper, and oregano.
  3. Brown chicken thighs on all sides (5-7 minutes). Remove and set aside.
  4. Cook chopped onion until softened (5 minutes). Add minced garlic and cook for 1 minute.
  5. Pour in diced tomatoes and simmer, scraping up browned bits.
  6. Return chicken, add chickpeas and olives.
  7. Cover and simmer for 20-25 minutes, until chicken is cooked.
  8. Remove from heat and stir in feta cheese.
  9. Garnish with parsley (optional) and serve.

Notes

Serve over rice, couscous, or quinoa for a complete meal.
