Method
- Heat olive oil in a large pot over medium heat.
- Season chicken thighs with salt, pepper, and oregano.
- Brown chicken thighs on all sides (5-7 minutes). Remove and set aside.
- Cook chopped onion until softened (5 minutes). Add minced garlic and cook for 1 minute.
- Pour in diced tomatoes and simmer, scraping up browned bits.
- Return chicken, add chickpeas and olives.
- Cover and simmer for 20-25 minutes, until chicken is cooked.
- Remove from heat and stir in feta cheese.
- Garnish with parsley (optional) and serve.
Notes
Serve over rice, couscous, or quinoa for a complete meal.
