Mediterranean Chicken Wraps

Ingredients
  

Chicken
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 0.5 tsp garlic powder
  • to taste Salt and pepper
Wraps
  • 4 large whole wheat tortillas
  • 0.5 cup hummus
  • 0.5 cup crumbled feta cheese
  • 0.5 cup chopped cucumber
  • 0.5 cup chopped tomatoes
  • 0.25 cup Kalamata olives sliced
  • 0.25 cup red onion thinly sliced
  • Lemon wedges for serving (optional)

Method
 

  1. Toss chicken with olive oil, oregano, garlic powder, salt, and pepper.
  2. Heat skillet over medium-high heat. Add chicken and cook until cooked through, about 5-7 minutes.
  3. Warm tortillas according to package directions.
  4. Spread hummus evenly over each tortilla.
  5. Top with cooked chicken, feta cheese, cucumber, tomatoes, olives, and red onion.
  6. Fold in the sides of the tortilla and roll up tightly.
  7. Serve immediately. Garnish with lemon wedges if desired.

Notes

For a spicier kick, add a pinch of red pepper flakes to the chicken marinade.
