Mediterranean Chicken Zucchini Bake

Ingredients
  

Chicken and Vegetables
  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch cubes
  • 2 medium zucchini sliced
  • 1 red bell pepper chopped
  • 1/2 red onion sliced
  • 14.5 oz canned diced tomatoes undrained
Flavorings
  • 1/2 cup Kalamata olives halved
  • 1/4 cup crumbled feta cheese
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes optional
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss chicken with olive oil, garlic, oregano, basil, red pepper flakes (if using), salt, and pepper.
  3. Add zucchini, bell pepper, red onion, and diced tomatoes to the bowl with the chicken. Toss to combine.
  4. Pour the mixture into a 9x13 inch baking dish.
  5. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
  6. Remove from oven and sprinkle with Kalamata olives and feta cheese.
  7. Let stand for a few minutes before serving.

Notes

For extra flavor, marinate the chicken for at least 30 minutes before baking.
