Method
- Preheat oven to 400°F (200°C).
- Toss chicken with olive oil, garlic, oregano, basil, red pepper flakes (if using), salt, and pepper.
- Add zucchini, bell pepper, red onion, and diced tomatoes to the bowl with the chicken. Toss to combine.
- Pour the mixture into a 9x13 inch baking dish.
- Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
- Remove from oven and sprinkle with Kalamata olives and feta cheese.
- Let stand for a few minutes before serving.
Notes
For extra flavor, marinate the chicken for at least 30 minutes before baking.
