Ingredients
  

Salad
  • 1 cup cooked quinoa
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped tomatoes
  • 1/4 cup Kalamata olives, halved
  • 2 tablespoons crumbled feta cheese
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • to taste Salt and pepper
  • Fresh parsley, chopped Optional

Method
 

  1. Combine quinoa, cucumber, tomatoes, and olives in a bowl.
  2. Whisk olive oil, lemon juice, garlic, salt, and pepper in a small bowl.
  3. Pour dressing over quinoa mixture and toss gently.
  4. Sprinkle with feta cheese and parsley (if using).
  5. Serve immediately or chill for later.

Notes

Adjust the amount of lemon juice and olive oil to your liking. For a heartier salad, add chickpeas or grilled chicken.
