  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 14.5 ounce diced tomatoes, undrained canned
  • 1/2 cup Kalamata olives, halved
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef and cook, breaking it up, until browned. Drain grease.
  3. Add onion and garlic and cook until softened, about 5 minutes.
  4. Add bell peppers and cook for 5 minutes, until slightly tender.
  5. Stir in diced tomatoes, olives, oregano, salt, and pepper.
  6. Simmer and cook for 10 minutes, stirring occasionally.
  7. Stir in parsley and feta cheese.
  8. Serve hot, over rice, couscous, or cauliflower rice.

Notes

For a spicier dish, add a pinch of red pepper flakes.
