Method
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook, breaking it up, until browned. Drain grease.
- Add onion and garlic and cook until softened, about 5 minutes.
- Add bell peppers and cook for 5 minutes, until slightly tender.
- Stir in diced tomatoes, olives, oregano, salt, and pepper.
- Simmer and cook for 10 minutes, stirring occasionally.
- Stir in parsley and feta cheese.
- Serve hot, over rice, couscous, or cauliflower rice.
Notes
For a spicier dish, add a pinch of red pepper flakes.
