Method
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned.
- Drain off any excess grease.
- Add red onion and garlic to the skillet and cook until softened, about 3 minutes.
- Add red and yellow bell peppers and cook until slightly tender, about 5 minutes.
- Stir in diced tomatoes, Kalamata olives, oregano, salt, and pepper.
- Bring to a simmer and cook for 5-7 minutes, or until the sauce has thickened slightly.
- Stir in fresh parsley and feta cheese.
- Serve immediately over couscous or quinoa, if desired. Garnish with lemon wedges, if desired.
Notes
For a spicier dish, add a pinch of red pepper flakes along with the oregano.
