  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1/2 cup chopped red onion
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 14.5 ounce can diced tomatoes, undrained
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Lemon wedges, for serving (optional) for serving (optional)
  • Cooked couscous or quinoa, for serving (optional) for serving (optional)

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned.
  2. Drain off any excess grease.
  3. Add red onion and garlic to the skillet and cook until softened, about 3 minutes.
  4. Add red and yellow bell peppers and cook until slightly tender, about 5 minutes.
  5. Stir in diced tomatoes, Kalamata olives, oregano, salt, and pepper.
  6. Bring to a simmer and cook for 5-7 minutes, or until the sauce has thickened slightly.
  7. Stir in fresh parsley and feta cheese.
  8. Serve immediately over couscous or quinoa, if desired. Garnish with lemon wedges, if desired.

Notes

For a spicier dish, add a pinch of red pepper flakes along with the oregano.
