  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped Kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped sun-dried tomatoes (oil-packed, drained) drained
  • 1/4 cup chopped fresh parsley

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Whisk together olive oil, lemon juice, oregano, basil, garlic powder, salt, and pepper.
  3. Place chicken breasts in a baking dish.
  4. Pour the olive oil mixture over the chicken.
  5. Sprinkle olives, feta, and sun-dried tomatoes over the chicken.
  6. Bake for 25-30 minutes, or until chicken is cooked through.
  7. Garnish with fresh parsley before serving.

Notes

For extra flavor, marinate the chicken in the olive oil mixture for at least 30 minutes before baking.
