  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • to taste Salt and pepper
  • 4 ounces feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground chicken and cook, breaking it up with a spoon, until browned.
  3. Add onion and cook until softened, about 5 minutes.
  4. Add garlic and bell pepper and cook for another 3 minutes, until slightly tender.
  5. Stir in Kalamata olives, sun-dried tomatoes, oregano, basil, and red pepper flakes (if using). Season with salt and pepper to taste.
  6. Cook for 5 minutes, stirring occasionally, to allow the flavors to meld.
  7. Remove from heat and stir in half of the feta cheese.
  8. Transfer to a serving dish and top with the remaining feta cheese and fresh parsley.

Notes

Adjust the amount of red pepper flakes to your spice preference.
