Method
- Heat olive oil in a large skillet over medium heat.
- Add ground chicken and cook, breaking it up with a spoon, until browned.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and bell pepper and cook for another 3 minutes, until slightly tender.
- Stir in Kalamata olives, sun-dried tomatoes, oregano, basil, and red pepper flakes (if using). Season with salt and pepper to taste.
- Cook for 5 minutes, stirring occasionally, to allow the flavors to meld.
- Remove from heat and stir in half of the feta cheese.
- Transfer to a serving dish and top with the remaining feta cheese and fresh parsley.
Notes
Adjust the amount of red pepper flakes to your spice preference.
