Ingredients
  

Lamb Mixture
  • 1 pound ground lamb
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
Bowl Ingredients
  • 4 cups cooked rice or quinoa
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 0.5 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 0.5 cup Kalamata olives, halved
  • 0.5 cup crumbled feta cheese
  • 0.25 cup fresh parsley, chopped
  • Tzatziki sauce (store-bought or homemade)
  • Lemon wedges, for serving

Method
 

  1. Combine lamb, oregano, thyme, garlic powder, onion powder, salt, and pepper.
  2. Cook lamb in skillet until browned, drain grease.
  3. Divide rice or quinoa among four bowls.
  4. Top bowls with lamb, cucumber, bell pepper, onion, tomatoes, olives, and feta.
  5. Drizzle with tzatziki sauce and garnish with parsley.
  6. Serve with lemon wedges.
