Ingredients
  

Salad
  • 1 cup cooked quinoa
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped tomatoes
  • 1/4 cup Kalamata olives, halved
  • 1/4 cup crumbled feta cheese
Dressing
  • 2 tablespoons hummus
  • 2 tablespoons lemon vinaigrette (olive oil, lemon juice, garlic, oregano, salt, pepper)
Optional
  • Grilled chicken or chickpeas for added protein Optional

Method
 

  1. Cook quinoa and let cool.
  2. Prepare lemon vinaigrette.
  3. Chop cucumber and tomatoes.
  4. Layer quinoa, cucumber, tomatoes, olives, and protein in a container.
  5. Sprinkle with feta cheese.
  6. Place hummus in a separate container.
  7. Store vinaigrette separately.
  8. Drizzle vinaigrette and serve with hummus.

Notes

Adjust the amount of lemon vinaigrette to your liking. You can also add other vegetables such as bell peppers or red onion.
