Ingredients
Method
- Heat olive oil in a skillet over medium heat.
- Place one tortilla in the skillet.
- Sprinkle half of the spinach, feta, mozzarella, and red onion over the tortilla.
- If desired, add Kalamata olives and sun-dried tomatoes.
- Top with the remaining spinach, feta, mozzarella, and red onion.
- Place the second tortilla on top.
- Cook for 3-4 minutes per side, until golden brown and cheese is melted.
- Remove from skillet and let cool slightly.
- Cut into wedges and serve. Optional: Serve with hummus for dipping.
Notes
For a crispier quesadilla, use a cast iron skillet.
