  • 2 large flour tortillas
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 red onion, thinly sliced
  • 1 tablespoon olive oil
  • Kalamata olives Optional
  • sun-dried tomatoes Optional
  • hummus Optional

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Place one tortilla in the skillet.
  3. Sprinkle half of the spinach, feta, mozzarella, and red onion over the tortilla.
  4. If desired, add Kalamata olives and sun-dried tomatoes.
  5. Top with the remaining spinach, feta, mozzarella, and red onion.
  6. Place the second tortilla on top.
  7. Cook for 3-4 minutes per side, until golden brown and cheese is melted.
  8. Remove from skillet and let cool slightly.
  9. Cut into wedges and serve. Optional: Serve with hummus for dipping.

Notes

For a crispier quesadilla, use a cast iron skillet.
