Salad
  • 2 cups cucumber finely diced
  • 2 cups tomato finely diced
  • 1/4 cup red onion finely diced
  • 1 tablespoon parsley chopped (or cilantro, or mint, or basil)
Dressing
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice (or red grape juice vinegar)
  • to taste salt and pepper
