Ingredients
  

Salad
  • 1 cucumber diced
  • 1 red bell pepper diced
  • 1/2 red onion thinly sliced
  • 1 cup cherry tomatoes halved
  • 1/2 cup Kalamata olives pitted and halved
  • 4 ounces feta cheese crumbled
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons red grape juice vinegar
  • 1 teaspoon dried oregano
  • to taste Salt and pepper

Method
 

  1. Combine cucumber, bell pepper, onion, tomatoes, and olives in a bowl.
  2. Whisk olive oil, vinegar, oregano, salt, and pepper in a small bowl.
  3. Pour dressing over vegetables and toss gently.
  4. Sprinkle feta cheese over the salad.
  5. Serve immediately or chill for later.

Notes

For a heartier salad, add grilled chicken or chickpeas.
