Method
- Heat olive oil in a large skillet over medium heat.
- Add red onion and cook until softened, about 5 minutes.
- Add garlic and red pepper flakes (if using) and cook for 1 minute more, until fragrant.
- Add shrimp and cook until pink and opaque, about 3-5 minutes, flipping halfway through.
- Stir in cherry tomatoes and Kalamata olives and cook for 2 minutes, until tomatoes are slightly softened.
- Remove from heat and stir in lemon juice and parsley.
- Season with salt and pepper to taste.
- Sprinkle with feta cheese and serve immediately.
Notes
Serve with a side of crusty bread or quinoa for a complete meal.
