  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1/2 red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add red onion and cook until softened, about 5 minutes.
  3. Add garlic and red pepper flakes (if using) and cook for 1 minute more, until fragrant.
  4. Add shrimp and cook until pink and opaque, about 3-5 minutes, flipping halfway through.
  5. Stir in cherry tomatoes and Kalamata olives and cook for 2 minutes, until tomatoes are slightly softened.
  6. Remove from heat and stir in lemon juice and parsley.
  7. Season with salt and pepper to taste.
  8. Sprinkle with feta cheese and serve immediately.

Notes

Serve with a side of crusty bread or quinoa for a complete meal.
