Mediterranean Stuffed Sweet Potatoes

Ingredients
  

Sweet Potatoes
  • 2 large sweet potatoes
Mediterranean Filling
  • 1 tablespoon olive oil
  • 1/2 cup chopped red onion
  • 1 clove garlic, minced
  • 1/2 cup chopped bell pepper (any color)
  • 1/2 cup cooked chickpeas, drained and rinsed
  • 1/4 cup Kalamata olives, pitted and chopped
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • to taste Salt and pepper

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Wash and pierce sweet potatoes with a fork.
  3. Bake sweet potatoes for 45-60 minutes, or until soft.
  4. Heat olive oil in a skillet over medium heat.
  5. Add red onion and bell pepper and cook until softened, about 5 minutes.
  6. Add garlic and cook for 1 minute more.
  7. Stir in chickpeas, olives, feta cheese, parsley, and lemon juice.
  8. Season with salt and pepper to taste.
  9. Once sweet potatoes are cooked, slice them open lengthwise.
  10. Fluff the inside with a fork and top with the Mediterranean mixture.
  11. Serve immediately.

Notes

Feel free to add other vegetables or herbs to the Mediterranean mixture based on your preferences.
