Method
- Preheat oven to 400°F (200°C).
- Wash and pierce sweet potatoes with a fork.
- Bake sweet potatoes for 45-60 minutes, or until soft.
- Heat olive oil in a skillet over medium heat.
- Add red onion and bell pepper and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more.
- Stir in chickpeas, olives, feta cheese, parsley, and lemon juice.
- Season with salt and pepper to taste.
- Once sweet potatoes are cooked, slice them open lengthwise.
- Fluff the inside with a fork and top with the Mediterranean mixture.
- Serve immediately.

Feel free to add other vegetables or herbs to the Mediterranean mixture based on your preferences.
